Un cop ben batut, afegir, poc a poc, la farina de panís. Incorporar la leche (abans la colarem y deixarem refredar una mica). Barrejar todos los ingredientes, tornar a colar y posar al fuego. Se ha de mantener en el foco, sin dejar de remover, hasta que espese.

Incorporeu a la barreja la llevadura con la llet, la farina de ametlla y, poc a poc, la farina. Aneu incorporant farina fins que la massa no s’apegue als dits. Treballeu la massa amb les mans. Fiebre dos agujeros y deje reposar durante 30 minutos dañado del pedrís, tapades con un paño.

Traspasar con mucho cuidado la masa a la tácula de trabajo debidamente enfarinada. Trabajar el aire con la ayuda de las manos y hacer porciones para hacer las coques (a su gusto, puede hacer 5 de 200 gr. o 2 gr.).

Amasar y donar de forma alargada. Colocar cada coca sobre una caja fuerte con papel de hornear. Pintar las cocas con o batidas con la ayuda de un pinzell y decorarlas a su gusto con la fruta confitada, los pinos y el azúcar perlado. Taparlas con un paño húmedo y dejar fermentar hasta que doblen el volumen.
